The Indonesian cinnamon variety comes from the cinnamon tree that grows in Sumatra, Indonesia. Its color is more dark brown than Ceylon cinnamon and its flavor leaves a more intense sweetness. Indonesian cinnamon has similar properties to Ceylon cinnamon, however the Indonesian contains coumarin which is harmful to the liver at high concentrations. It has potent antimicrobial, antiinflammatory properties and it is rich in antioxidantas that are associated with many health benefits such as lowering cholesterol, lowering blood sugar, boosting metabolism and reducing body weight.
